A reduction is the process of boiling off the excess water from a liquid until the substance reaches a denser consistency. Basically, a reduction is a more concentrated, flavor-packed form of whatever you’re cooking. I prefer to use freshly squeezed fruit juice because most store bought orange juice has preservatives etc in it and just isn’t that good.
Orange/Clementine Reduction:
Materials:
5-10 Clementines (or oranges or lemons)
Knife
Mesh strainer/screen
Cooking Pot
Small bottle
Cups
1. Take your clementines and slice them each into four wedges. Squeeze out each wedge into a cup until you have a fair amount of juice (1/4-1/2 cup or so).
2. Run your juice through the strainer to get rid of pulp.
3. Put the strained juice on the stove to cook. Put the stove on about half power (5 or 6) and let the juice begin to cook. Stir it periodically unitl the liquid turns a darker amber color.
4. Once a lot of the water has boiled off and the liquid darkens, quickly remove the sauce from the stove before it burns and bottle it using a funnel. As the sauce cools it will congeal into a syrup.
There you have it, now go ahead and use your reduction for some tasty toast, or dribble a couple drops on your favorite "herbs" for a sweet citrus flavor. You can even use it to make orange flavored snow cones. Be sure to keep the reduction in the fridge so it’ll last longer (adding a couple drops of olive oil helps too).
Dec 19, 2006 2:14 pm - Lol fuck the cooking channel this is right where it belongs, although what he used it for was only to make a concentrated orange flavor, the process is what is keen! step by step instructions, with the right mind set you could think of some gnar shit to "condense" and well "strengthen" the flavor of.
Basiccall what this person did was make a still but an orange still. And since water boils at a lower temperature than the orange it will evaporate leaving a more concentrated orange like he said. With a cover and some copper coils you basically make moonshine by doing this, with a couple extra steps and things... maybe ill make an egg on it
